    Morning(s) project

We took a ride today to see my local Amish green grocer and make a score on a batch of Habanero peppers for drying----they are beautiful

I got 10 pints---that will likely take two runs in my dehydrator. I'll post a picture tomorrow once I am underway with loading the dehydrator.

I also got Jalapeno, African Bird peppers, Poblanos, Hungarian hot wax, tomatoes, corn, cauliflower, cabbage, potatoes, and greens of various kinds

Had to look up Poblano - sounds tasty. I was surprised it's considered a fruit (per Wikipedia).

I think most people encounter them, without knowing, it in chiles rellenos. They are large enough and mild enough to work well for stuffing.

Yeah, sounds right. I'm assuming its popularity is due to the flavor it brings. Heat wise, on a 5-point scale, it's considered a 1.

You are correct---they have a very nice flavor

    Here are the morning projects:

Five trays of peppers locked and loaded in the dehydrator:

And 4 qts of green beans

I managed to get through the peppers without rubbing my eyes

I have about one more tray to get in. As they dry I will consolidate them and that should give me enough space to get the remainder in.

The green beans will be for dinner(s)---beginning tonight

Poblanos are the perfect vessel for stuffing---they happily play a supporting role.

Dave , Not knowing doodley squat about peppers , I noticed you do not remove the seeds prior to drying . Does that help hold the flavor or increase the temp of the pepper ?.

It does, the seeds and the membrane that holds them are the source of the greatest amount of heat----without them intact life would be very dull

Many people who cook with the hottest of peppers will add them to a pot whole while some will stick a toothpick through them to enjoy the flavor benefit without the heat. They remove the pepper before serving. I have never tried either so I can't confirm or deny that claim.
