    The carcass

    Usually I just toss the carcass. This year I decided to make soup so I simmered it for hours, bones, skin, neck. Then I strained it to remove the bones and skin. Added in some carrots and celery, some seasonings and ended up with a wonderful broth with way more meat than anticipated. Now to make some fettuccini noodles which I can add when I want turkey noodle soup.

    Might try some stuffing leftovers in there next time. Found it really added to the flavor and made it thicker. Not much left overs since we got to go to the daughters house this year.

    When it said carcass and soup I was actually afraid to look and see what it was. But it looks good.

    so I made some fettuccini tonight, reheated the turkey carcass soup and had a very enjoyable bowl of turkey noodle soup ( I only used a quarter of the pasta I made)
