    Tamales for New Years

    I almost have them done. another 40 minutes of steaming to go

    Pork simmered in a red chile sauce ( Guajillo and Ancho) masa wrapped in corn husks. I made everything from scratch.

    We always eat black-eyed peas (not hoppin’ John though). I’m always up for some good tamales, but making them by hand is quite the chore from my one experience doing that. Sauerkraut will never touch my lips no matter how much good luck comes from it.

    I started making the Tamales at 1500 and finished cooking at 2030. So yeah it's a lot of work. But worth it.

    It is truly one of nature's health foods.

    When I was doing my ocean hopping gig my system would often get out of synch. My fix was always to sup on kraut when in Germany.

    If the acidic bite is too much, add a little heavy cream---not much but it will smooth out the taste.

    I have a dear friend that makes her own using primarily Eastern European origin recipes---they are fantastic. One of my favorites includes garlic and dill weed.

    While at the store this week I found another to try---which is now patiently awaiting me

    "Kimchi." Not a word I've heard her in Utah. But, I worked with a Philipino woman in San Jose who would regularly bring kimchi to work and share it with me. She's no longer with us, but she sure was special. I look forward to seeing her again someday.
