    Favored pots and pans

    Two of my kitchen work horses---the cast iron skillet I suspect is older than me---it came from my Mother.
    I have all of her cast ironware, some of which are no longer made. One is a pot about 14" in diameter and 6" deep with a lid. It is thin wall for cast iron at about 3/16". That is my chili and paella pot and works as well over a fire as on the stove :droll:

    Other heavily used:

    8" GreenPan (breakfast)
    10" non-stick skillet
    12" steel skillet
    12" SS skillet (clad)


    All of my pots are clad, be they copper or SS outside. I use my copper clad pots heavily because I like the look but will admit I see no benefit in performance when compared with my SS clad pots.

    I also will add, I doubt that instant pot will ever make the list of favored pots and pans.

    Wifey and I have used a set of Calphalon pots/pans for 36 years now. They've held up well. I treated them with oil and cooked them in the oven, before I wiped them down.

    Too bad cornbread does not suit your diet because the cast iron skillet will make a perfect pan of it.

    Ironclad here. I wish I could use cast iron skillets on my stove top but I can't....

    The current "Cook Book" from Cooks Illustrated has a corn bread recipe and I still have yours---I just might have to give it another try

    My cornbread recipe calls for white cornmeal, preferably Aunt Jemima brand, but be aware that wokie-dokie Pepsi Co., which owns Aunt Jemima through Quaker Oates, changed the name to Pearl Milling Co. for political correctness reasons. It was always hard for me to find here, and I have not seen any of the newly branded White Cornmeal yet, so I do not know if it is still available. Fortunately, I still have a couple of 5lb. bags in the freezer.
