    test batch

    Test Batch
    Home made Masa, fork shredded garlic chicken, raspberry chocolate mole` sauce inside and it will be served covered in the same Mole` sauce

    from this point if it turns out well I will play around with ingredients. Right now I am just trying to get the home made Masa correct. I have the Mole` dialed in from other dishes

    It came out close to what I wanted. I need to make a more moist masa and add some spices to it. overall the texture was right but the end result was too bland for my taste. Still it was a palatable result for a first try at tamales from scratch

    Reminds me of the ones my great-grandma in El Paso made. She was one hell of a woman. I stayed with her one Summer and she made me go to Bible School. Surprisingly, I enjoyed the heck out of it.

    From age 12 to 18 summer vacation school meant learning the value of hard work putting in long days at my families restaurant.

    I spent my high school summers "working" on my aunt and uncle's 300 acre cattle ranch in central Missouri. working 7 days a week doing cattle stuff, after church and Sunday school there was still cattle stuff to do.
