Tried making pasta once. Learned that to have it be edible, buy it at the store.
Having said that - I love pasta. I make a batch of sauce every week and eat the excess in bits. Num. Lotsa garlic. Chunks of sausage are preferred.

I love pasta but it's a big No-No for me. Turns straight to sugar. My loss indeed.

In keeping with my affinity for fine foods and haughty cuisine, I have developed my own recipe for hamburger helper — Joe’s Taco Pasta.
1 lb. ground chuck
10 oz. medium shell macaroni
1 10 oz. can diced tomato & green chili
1 can Campbell cheddar cheese soup
1/2 diced onion
Garlic powder
Cilantro
Black pepper
Parsley (just to keep it healthy)
3 cups chicken stock unsalted
3 Tbls. Taco seasoning ( preferably Tone’s brand)
8 oz. Herdez salsa casara
2 cups grated cheddar cheese
Brown meat & onions in a deep 12” skillet, toss in the rest of the stuff and cook down uncovered. Save the grated cheese until the pasta is al dente.
I have a pasta machine and we took a class in Italy on how to make it, but it languishes somewhere in the garage as we found the dried stuff just as good to our pedestrian tastes and infinitely easier. I can’t even tell the difference between most cheapo store brands and the expensive imported stuff.

My mother made egg noodles and did it without any gadgets. Her entire "kit" consisted of a rolling pin and a knife. Not unlike what is shown here.
She didn't even dirty a bowl, she simply made a pile of flour on a cutting board, made a hole in the center and broke the eggs into the hole---then stirred (with her fingers) from the center out.
This was not a "project" effort---if she was going to make something with noodles tonight she made the noodles as simply part of the meal preparation.
When done, she washed her rolling pin, cleaned the cutting board and knife---job complete.
