    Pocket Pita Bread recipe

This makes a really nice basic pocket pita bread. Personally I would add some spices to the flour for a better taste as this is rather neutral. I used King Arthur Bread Flour.

I'm a big fan of pita bread. I have to be careful eating it because it is so full of carbs. I love to dip it in a good hummus. Fortunately we have a bakery that distributes pita bread all through the area. You can go in there and get it hot right out of the oven.

I looked at their site. Those look like flat bread pitas. What I'm baking are hollow so that you can stuff them Click image for larger version.

They open. They bake them Old World style since a huge amount of their customers are of Middle Eastern descent and prefer them that way therefore they look much thinner.
