Last night's dinner---and a fine candidate to be repeated during Lent is this cauliflower soup. This could easily be altered to be vegan.

We just came off our annual cleanse... Pretty much a vegan diet for 3 weeks. No alcohol, no carbs no sugars etc.... NO FUN. I could never be a vegan.
lost 8lbs though... working on putting them back on this week
Cauliflower makes a great substitute for mashed potatoes too....

Even when I make a meal like that without any kind of meat or fish I am silently saying to myself----come on breakfast
