I watched a couple of you tube videos by the Breaded Butchers about the Kobe and Wagyu beef. They seemed to clear up what's what.

The whole deal
A funny story:
I was in a Japanese steak house in Japan (maybe Tokyo) and the chef at our "table" spoke very good English and had the artistic moves that I associate with Benihana restaurants here in the US. As the dinner went on I realized he was the only one that was making these grand moves. Other chefs would, on occasion toss a piece of food, or juggle utensils but nothing as elaborate as our chef was doing on an ongoing basis. Eventually I asked him where he had honed his considerable skills---his response---"the same place I learned English, at Benihana in Harrisburg, PA."
