    On my Cajun journey

I took the night off last night! I let Mama take over.

I made my, what has become every third week run, to the butcher yesterday. On sale and finding it's way into my cart was two pounds of smoked sausage--so I used one pound of smoked sausage for dinner.

I added that to the Slap ya Mama Jambalaya mix, per the directions, only departing by adding one diced tomato and reducing the water by 1/2 cup. I intentionally did not do any further "enhancements". I did garnish with fresh parsley.

To limit the carbs, I served that with steamed cauliflower.

I was happy with the results--as was my wife, which is even more important

So---now I'm thinking I might try calamari next

How do you cook your Calamari? I sauté it with butter and Franks Red Hot and some shrimp.

Not mentioned in this recipe, I soak the calamari overnight in butter milk. It helps to tenderize them. I also usually use whole squid and do the heads and tentacles the same as the rings. I like the different texture of the tentacles. I'm thinking that with all these Cajun spices on hand I will have to add them to the mix

That my friend could rule out one of the great joys of the sea---octopus. My favorite, is braised and then grilled with a med char----

Both are snake free. I am surprised some dimwits have not tried to import them.

For real? I feel like I've been set up, but here goes, anyway.

The Mongoose lives in India. Not Ireland, and not Hawaii.
