AS for driving through deep water, we have a Stupid Motorist Law in Az. If you drive into a flooded wash (barricades or not) and you have to be rescued you will pay the tab. We live in the desert but still idiots die every year. Last year we had a guy in a rural community try to drive 2 families across a flooded river in an old military duce and a half and he lost 5 kids.... Just so they could go to school. Idiot!!

People have trouble understanding the force of moving water. I did as well until I tried to wade through some.

Even after living in the east for 50 years, my wife "suffers" from her decidedly mid-western pallet. I have learned over the years, it is better to accept and accommodate her need for bland than try to expand her horizons. Still, on occasion, she will temporarily lose her mind and take a bite of something on my plate only to realize it has been "personalized"

Back to corn for a minute: I posted this last year, but I will repeat it for anyone who might have missed it.

My go to preparation of corn on the cob for up to 4 cobs at a time (beyond that I steam) is using the microwave. First, I trim the silk end and the stalk end and pull off the outer husk, leaving all the inner tight husk in place. I then turn them end for end beside each other in the microwave. Set it on high for 3 minutes, turn each 180 degrees and back in for 2 minutes. Using hot gloves husk them immediately when you take them out. Grasp the husk at the small end between your thumb and forefinger and pull down making sure the silk is within your grasp. Two or three "pulls" and you are done, with no silk remaining.

For three, I arrange them in the shape of a triangle and for four I use a rectangle and increase the time by 1 or 2 minutes.

Sweet corn silks give up their grip rather easily, but my experience with field corn is much different. Do you find your method for microwave corn-on-the-cob works with the silks as well with field corn?

Have you had what we call “fried field corn,” Dave?

It works as well---but the times need to be extended. I would not try field corn and sweet corn together.

No, but there are folks around here that make it---mostly Amish and Mennonites. That said, my mother never made it---she was rather critical of many of the Old Order Mennonite and Amish diets. Their typical diets tend to be big on carbs and fats and often shy on protein.

Typically they would make fried corn with lard---lots of lard and put it over egg noodles. There is an old Amish saying that speaks to the diet: "A fat wife and a big barn never did any man harm". The men don't normally share the obesity problem but they do have a lot of cholesterol related illness.

I am very envious of your coming field corn harvest. Since my move to San Antonio, we have lost our source, so we have not had any for 10 years. I found some growing fields to the east, but I could never raise anyone in the houses to arraign a buy. Oddly, SA does not have anything worthy of the name of farmer’s market, and no one has answered my posts on local media for sources of fresh field corn. If you try my recipe above, I”ll be willing to bet you will become as hooked as my family.

Eagerly awaiting a report for a vicarious fix to my addiction.
Cooking must be of very fresh picked ears. Field corn goes “over” very quickly.
