    Pizza

    After months of the local markets being out of Yeast and a choice of flour I scored last night and found both of the items I was looking for. Set up the Kitchen Aid mixer and made a batch of dough. I let it proof for an hour and then made a pizza. Whole Milk Mozzarella, Tomato sauce, Pepperoni. Calamata Olives, sliced Heirloom Tomato's, garlic, and Pesto sauce.

    really tasty, the crust was light but with just the right amount of chewyness

    And the Jalapenos.....

    I found yeast at Trader Joes during the shortage. You just had to ask for it.

    Oddly, because they are perfect for pizza, but hardly anyone adds Hatch Green Chile’s to a proper pizza, and I never find that ingredient offered in pizza shops around here. They look at me like they never heard of it when I ask.

    Incidentally, I did not know yeast was hard to find these days...shows how much pizza dough or baking we conjure.

    I just typically use Lavash ... Why make you own dough?

    Because the premade dough or crusts don't taste half as good ( if you know what you are doing)
