    Praise for Amazon

    While dislike for Amazon seems to be fashionable---I am a fan---they allow me access to things I would not be able to access locally. I am blessed with two excellent groceries within a reasonable driving distance (Wegmans and Assi) but especially for regional foods I have come to rely on Amazon. I just received another shipment yesterday of Olive Salad (LA fare) and Hatch Chilies (AZ). Another shipment of RO-TEL diced tomatoes and chilies is due next week.

    My Spice Sage remains my go to source for spices. Excellent service, fresh product and reasonable prices.

    Grew up eating Ro-Tel tomatoes w/ green chilies, but always thought the tomatoes were poor. I have recently found Red Gold brand makes their version and Red Gold canned tomatoes are excellent.

    I too am very pleased with Amazon. One of the most well run companies I know of. Many traditional companies could learn from them.

    My order actually arrived yesterday---and imagine this---it came from Sam's Club

    BTW Joe, I share the tomato reservations but have passed it off by how difficult it is to make such small dice---the primary reason I buy them. I can't match that size even with the sharpest of knives.

    I never noticed the dice size of the green chilies before.
    Btw, I got a new electric belt knife sharpener thingie, Work Sharp, from Amazon the other day, which works pretty nicely. $69.

    Nice

    I finely gave up my reliance on diamond hones (they can be awkward on long blades) and bought a Chef's Choice Trizor XV. The best I can say is that I tend to use it more than I used my hones---so it wins for convenience. However, my son the chef offered his look of disapproval the moment he saw it He uses wet stones.

    The blades come out not as sharp as I would like---but they are workable and not much material is taken off. I only use the hone slot for touch up.

    I found the ultimate test for sharpness of blades interesting. That test, I read, was for Samari blades and consisted of throwing a silk scarf into the air and slicing it in two with one slash. There is a small contingent of contemporary blade devotees who still make their own and test them to that standard.

    Interesting---but I think I'll continue to keep my own standard---does it slice a ripe tomato without compression.

    Beside, I think I would quickly run afoul of the lady who has the silk scarves

    Even my not-so-sharp serrated knives slice tomatoes nicely. I don’t like the mouth feel of tomato skins, so I remove them. The best way, of course, is to blanch them in boiling water after slicing a shallow X on the bottom, but seldom have time for that, and when that happens peal them with a serrated knife.

    I do have a "tomato" knife handy, but on most occasions I avoid adding to the clean up duties and go with the knife in hand. Kind of silly of me, it does an excellent job.

    Plus I have a health based opinion on tomato skins---they are a valuable source of of insoluble fiber---and as such are best put to good use by the internal comminutor

    AH----but I didn't "bite" on that one. If you remember, the now disgraced Frugal Grommet was a big advocate of that practice. I'll boil shrimp and lobster shells but onion skins hold no such lure.

    Back to knives, I probably should have added that my "go to" knife is not a knife at all, it is a "light" cleaver. I use it for all my vegetable prep work as well as cutting of meat. I use it to break down poultry but not anything heavier than that. It excels at fine dicing since the blade is curved and perfect for simply rolling it back and forth. I have an "Ulu" that I use at times for the same reason.

    Sounds like this one I bought recently, but mine is not a curved blade vegetable cleaver. I find it very handy for multiple tasks —
