    Thanksgiving

    One big bird, out of the brine, rinsed, and now to add the herb rub under the skin. It will go back into the fridge until 3 am when I put it into the oven.

    3am? How long are you planning to cook it?


    Mine this year has been spatchelcocked and will be rubbed and cooked on the grill.

    probably until 11am @ 300*. Slow cooked at low temps with frequent under the skin basting of the bird with the drippings. It comes out really nice and moist. I use digital thermometers in a couple of places to monitor the internal meat temps
