    His point is very valid......how many times have you gone out to eat even to up scale restaurants and the knives are lacking?

    How many times have you had issues with the knives cutting properly, this is a pet peeve of mine, especially when out for dinner at a suit/tire upscale restaurant that has those pesky stars & a waiter for each table....

    I've sent knives back more than once, asking for a sharp one & once at the oldest steakhouse in Denver, they thought prime rib was the problem & got a new hunk of blacked buffalo prime rib the head Chef did himself and still had the problem. I pulled out my Spyderco Military and sliced the buffalo like it was hot knife in warm butter.....the Chef actually came out to watch and look at the knife.

    Course we stop in to Golden every couple 3 months and have Spyderco actually sharpen my knives as I suck at it & they make sure they are are insanely sharp......

    I took a carpentry class once and the carpenter/instructor had a professional grinding wheel & edge jig, which he used to perfection to sharpen our chisels and other tools. I used it for my knives and seriously wanted one, but the $500 tab seemed too steep at the time. Few things are more useful than a good, sharp knife when you need one. I always carry a good folder, but strangely, my really good ones such as my mastodon bone scales Damascus knife stay in the safe because I am prone to loose a knife.

    I also am pretty worthless at putting an acceptable edge on Old Ugly, but I finally bought a Work Sharp from Amazon, and no longer fear embarrassment when I can't even slice paper......Ben

    My knives are not sharp but then again they won't let me have sharp objects.
