    Steak Night

    It’s time to fess up. I have ben played for a sucker. For the last three or so years my wife an I have been eating steak every other week. I have been buying the steaks form XYZ Company by mail. The steaks were “ prime “ steaks rather than “ choice “ but we had tasted each and thought the prime were better tasting and worth the cost.

    Fast forward to a post by Dave, in which he lauded steaks of between 1 3/4 to 2 “ thick. Hot seared on each side for two min. then into a 400 deg. oven for four min.
    Well, to make this story short, I tried that with a “aged, choice “ steak. The results were fantastic. The steak was cooked perfectly and the taste was better than the “ prime “ steaks.
    We now split one steak between us which cuts the cost of our dinner in half and tastes much better.

    You can get prime beef from Costco. Probably cheaper than the mail order place, and not frozen.

    I saw that method in a food article but have not tried it. Got to give it a shot.

    Costco steaks are excellent even without going all the way to prime.

    I like using my BBQ grill for steaks. What I do is fill my chimney full and when ready put all the coals [ started with no fluid ] on one side of the grill. In order to not burn the meat, I do each side for two one minute periods and then move it to the “ non coal “ side. Place the cover on the grill and let it set for the four minutes.

    All the steaks done in this manner have been cooked to med rare and are very tender. Both the bride and I are well satisfied with them.

    So once again, I have to thank Dave.I do however have to question whether or not to chastise him for the loss of many hundreds of dollars which could have been saved had he posted his cooking method at a much earlier date.

    P.S. Costco is not available in the Great State of Louisiana.

    While almost all of my meat comes from Sam's because of location, I have to disagree. Until the past few months, my Sam's didn't have Prime beef at all. Now it is very limited.

    I used to buy hind quarters and have them cut and wrapped to my specifications. In the day of boxed beef, that has become problematic.

    My HEB has heavy dry-aged beef, but the price is an issue.

    The steaks I now buy, aged bone in prime rib 1.3 - 1.5 lb. Cost right around 23 - 25 $.

    We get the "cheap" meat on base at the Commissary, prime rib, prime ribeye, some choice, but you can tell the difference between choice and prime in flavor and tenderness. Normally throw em on the grill and grill em 2-3 min a side as hot as the grill will go. However, want to try the Traeger and see how that does as they claim they are superb.

    Have done the searing in a cast iron skillet and throw em into the oven, but that's is meh, not as good as on the grill for whatever reason and tends to smoke up the house.
