It’s time to fess up. I have ben played for a sucker. For the last three or so years my wife an I have been eating steak every other week. I have been buying the steaks form XYZ Company by mail. The steaks were “ prime “ steaks rather than “ choice “ but we had tasted each and thought the prime were better tasting and worth the cost.

Fast forward to a post by Dave, in which he lauded steaks of between 1 3/4 to 2 “ thick. Hot seared on each side for two min. then into a 400 deg. oven for four min.
Well, to make this story short, I tried that with a “aged, choice “ steak. The results were fantastic. The steak was cooked perfectly and the taste was better than the “ prime “ steaks.
We now split one steak between us which cuts the cost of our dinner in half and tastes much better.
