No, not mine. The photo is from the article I included on Trattoria La Mezza Luna in Orvieto, Italy, which, according to the article, is renowned for the dish drawing people from all over the world. Reportedly, the secret is the flip of the wrist at precisely the correct time coating the pasta with raw egg. I also note his dish is made with something called “pork cheek,” a cut of pork with which I am unfamiliar. Could that be what we call pork jowl?

Same thing. I know of no cheeks from any critter that I would cast aside.
My biggest regret is for all the hogs heads I was party to tossing into the scrapple pot without first removing the jowls.
As to the coating of the pasta, I fully agree. Without that done correctly the dish becomes no more than pasta with scrambled eggs.

Guess I'm uncivilized......this looks blah to boring and icky. But i'm not a fan of pasta, it's just wasted calories/carbs that do the body harm.
I was hoping you would tell us you had been to this trattoria in Orvieto, Dave, during your adventures in Italy. I guess it’s up to me to get there and report back.

One thing that has always amazed me about Italians's use of pasta is that it has a huge scope and many of them are profoundly simple and stunningly delicious.
The company cafeteria in our main Italian plant made a very simple dish of spaghetti, wild mushrooms, herbs and olive oil----it was incredible

Ok, a break through of sorts.
I tried a different approach and it shifts this from demanding a bit of luck to a more controlled process.
First, I set the eggs out an hour before using them. Next, I cooked the pasta normally.
I sauteed bacon, onion and garlic. When the pasta was done I transferred it to the saute pan. While the pasta dried on medium heat I tempered the beaten eggs using the pasta water. I turned the heat under the saute pan to medium low, added the tempered eggs and continued to stir until done.

Yes, but it was very little. I did not add any oil to the pasta water.

OH BOY--now you caught me! Recipes are suggestions in most case for me--especially after the first "event".
But here goes:
First the pasta---it was not spaghetti (none in the pantry), it was Amish homemade egg noodles. I used a two handfuls
Eggs--two--I had to keep the other 4 in the frig for breakfast
Bacon--about the equivalent of one slice but that is an estimate since I had to cut it off a piece of frozen slab bacon--hey I warned you!
Onion, 1/2 of a medium onion, diced
Garlic, one large clove.
OK--now that you have exposed me as undisciplined--here is some more detail.
As much as the tempering seemed to have a beneficial impact I think the temperature of the skillet is critical--it has to be low. At first I thought I had more egg than I should have had for the amount of pasta because there was "free" egg on the bottom of the pan. However, as I continued to stir that free egg disappeared, it all attached to the pasta. When done the pan was clean and there was no evidence of scrambled egg in the pasta--it was exactly as it should be.
A word of explanation for what brought me to this. My wife decided she would like breakfast for dinner. With only 6 eggs in the refrigerator and not wanting to go to town until latter tomorrow nor to disappoint the Queen ----that left me only two eggs for tonight
We had stopped at the butcher shop on the way so I did have breakfast meat.
