    Simple pleasure

    My wife is currently in Fl, leaving me with no expectations but my own. So---last weekend I took a ham bone out of the freezer----put that in a pot of water with a big bunch of collard greens and let them simmer away for about 4 hours with only fish sauce and white vinegar added to the pot. About an hour before dinner I added a few red skin potatoes and fresh ground pepper. Fed me handsomely for the weekend

    I cooked up a mess of Collards last week. A check of the freezer told me I was out of ham and hocks both, so I used bacon instead. A bit of garlic, some chopped onions, black pepper, Tony Cachere's Creole seasoning and a few squirts of Louisiana red went into the pot. Simmered for a few hours and YUM!!!!

    Of course, cornbread is mandatory with Collards, I did a skillet of that, too..

    No offense intended, and I know this is a sacrilege to you guys but I am not a big fan of corn bread. I will eat it when someone else makes it but I don't make it myself.
    Collards is something that has come to Yankee world rather recently and I love the flavor as well as the health aspect of them. It is an extra bonus for us to have fresh greens in the dead of winter.

    How odd! It was only yesterday that I dredged up That’s What I Like About The South from my earliest memories and it stuck in my mind repeating over and over. I always loved this phrase

    You may have never had good cornbread before. There is a lot of poor or bad cornbread around. I have never had good Collard Greens though. I have to leave the house if someone makes them.

    Corn Bread

    You never put sugar in corn bread and you always bake it in an iron skillet. White corn meal is much better too.

    My corn bread recipe —

    1 1/2 cup white corn meal (must be fine grind WHITE corn meal - Aunt Jemima is perfect)
    1/3 cup all-purpose flour
    2 eggs
    1 3/4 cup buttermilk
    1/2 t. baking soda
    1T. baking powder
    1t. salt
    2 T. bacon fat

    Mix the dry ingredients throughly, then mix the wet ingredients in but lightly adding the warm bacon fat from a heated 10” cast iron skillet at the end. Pour the mix in the skillet which has been rewarmed and bake ~25 minutes in a 450 degree oven checking for light brown color. Remove upside down onto a plate and slice in two to let steam escape.

    Scrapple

    25 gal plus cast iron pot over a wood fire is best

    Water
    Hog trimmings, bones, ofal, and head
    Boil until meat falls off bones
    Pick meat and rough grind, return to pot with stock
    Bring back to boil and add corn meal, buckwheat flour, coriander, salt and pepper.
    Stir constantly until thick and it makes a plopping sound.
    Ladle out into loaf pans and cool.

    To eat, slice thin or thick and brown in a cast iron skillet.

    Heaven on a plate

    I have enshrined you corn bread recipe in my files and will give it a try.

    A bit more on scrapple: years ago when we were all young and gong ho we hunted deer with great enthusiasm and it was not unusual for us to take 30 or more deer in a week of hunting.

    We would communally butcher. One of the guys worked at a butcher shop and he would get a load of hog offal to add to the pots of deer bones and offal. We would do the skinning one night, then the cutting on a Saturday and Sunday (all day) make scrapple.

    Believe me---if you ever had that you would have an entirely different opinion of scrapple.

    Just to assure no misunderstanding here---anyone who has picked something out of the grocery case called scrapple--scrap it----that is as far from good as one can get
