    As a kid the things I liked best at butchering time all involved offal. We killed hogs on Saturday, cut up the beef and made sausage and scrapple---on Sunday we had fried beef brains and scrambled eggs. In addition to scrapple, my Mother made the best souse from pigs feet you could ever imagine and simaage which is stuffed pig's stomach.

    I suspect those smoked by someone who really knows how to do it the old fashioned way will be better than those massed produced for sale at grocery chains.

    I love a good pot of butter beans with ham bone, but I usually have a leftover HoneyBaked ham bone in the freezer, which is perfect. Incidentally, Goya brand offers packets of concentrated ham flavoring good in beans and such.

    I thought there was a picture of a ham hock here but now don't see it. In any event, I am home today and making a pot of collard greens--with a smoked ham hock. The picture that I think was here previously appeared to have been cut off the ham after being smoked. The ones I get from my butcher I believe are double smoked. Without question it was smoked after being cut off the ham.

    I love collard greens. I cooked mine with salt pork. I also have to have cornbread with mine. I also love butter beans I will cook them with some ham hock. It is a fantastic meal.
