As for jackrabbits---we don't have them around here but I sure met a lot while wondering around in the Utah deserts and while I never shot one (or tried) I was told they were not edible. Being a bit of a skeptic :rolleyes2: I found the stories of parasites and disease a little hard to believe.
Not that it made me want to seek out a meal of jackrabbit I did find out that they are in fact edible and were common fare to the pioneers and the poor during the depression. The connotation of "peasant food" probably did not help their image as table fare.
