these were awesome Taco's I had leftover slow cooked shredded pork in an Ancho pepper red sauce from making tamales that I heated up, fresh made corn tortillas, some chopped lettuce, diced habanero pepper, chopped cilantro, avocado, Dubliner cheese and salsa verde.

I'm no food expert. But, I do see most Mexican dishes as containing certain basic ingredients, much like Italian food - which also has certain basics. I mention that because, once one can understand and prepare the basics, all the rest is downhill. And, if one can't adequately prepare a basic, they can readily find a store that sells it.
